booshala | swiss chard, rice, and yogurt soup

Booshala is the heart of Assyrian food. This fact is embedded in the name itself: “booshala,” literally translated in some dialects of Assyrian, means “cooked.” To me, it was always just the name of this yogurt and swiss chard soup, but I learned about this complex etymology when I met up with Chaldean blogger, Candice, from the blog Boushala.

At the time, I had just developed this recipe, based on the booshala of my grandfather’s mother as well as the booshala of my grandmother, and I was curious what Candice’s recipe for booshala looked like, so before we met, I checked out her recipes page, which had several really delicious stews and soups, but I didn’t see a recipe for booshala. When we met, we had such a wonderful conversation about food, family, photography, and graphic design, that before we had to go our separate ways, I almost forgot to ask her this question.

So I (probably a little rudely and abruptly) asked Candice why she had a blog called “Boushala” without a recipe for the dish, thinking maybe her boushala was a well-kept family secret. She gave me a puzzled look and asked what I meant, and we eventually fumbled toward realizing that this word meant something completely different to each of us. In Candice’s language, “boushala” means cooked food, but in my family’s dialect, “booshala” means a very specific kind of food.

In other words, according to my own folk etymology that I’ve dreamed up, at some point in our history, if you vaguely asked for food, this soup is what you’d get. It is Assyrian cooking in its most essential form.

Like gurdthu, booshala takes the two main staples of our cuisine, yogurt and rice, and cooks them together into something delicious. But this dish can be a little bit of an acquired taste for people who aren’t used to cooking with yogurt. I think there are two major stumbling blocks: the temperature and the flavor pairings. Allow me to assuage your anxiety, if you’re having trouble wrapping your head around what this might taste like.

You might not be used to the idea of eating yogurt in something warm instead of something chilled. But eating a yogurt soup isn’t too far a jump from eating chili with a big dollop of sour cream mixed in, or eating a baked spinach dip with loads of cream cheese, parmesan, and sour cream. I think another part of the anxiety over the temperature is a technical one, that the yogurt will curdle if you heat it. But when you add an egg, bring it to a simmer while stirring constantly, and then cook it over low heat, you have nothing to worry about. It will stay creamy and velvety. And moreover, booshala can be served either warm or chilled, so feel free to start by chilling it if you’re nervous about eating a warm yogurt soup.

But I guess cold yogurt soup still might not entirely sell you on the concept, because I think the more fundamental hangup is the idea of eating yogurt with savory flavors. In Middle Eastern food, this is a common and very delicious pairing. Yogurt is often dolloped on prakhe and enjoyed with za’atar or herbs. And indeed, there’s no reason that yogurt should be limited to sweet flavors, since it’s such a neutral ingredient. Consider the analogous flavor pairings of french onion dip, bagels with lox and cream cheese, and crème fraîche and salmon roe crêpes. All of these dairy products are fermented in the same way as yogurt, starting with just about the same ingredients (with varying degrees of dairy fat), and they’re all delicious with savory ingredients.

But as any parent knows, it’s impossible to give reasons and arguments to convince someone that they should try to enjoy a certain food. At the end of the day, learning to love a new thing just takes some combination of open-mindedness and exposure. And booshala hardly needs defending, since we love it enough for everyone.

The yogurt we use for booshala is traditionally made from scratch, although I’ve tested this recipe with both homemade and store-bought and each works just fine. Just make sure you find a yogurt whose flavor you like. Not to name names, but there are a couple yogurt brands out there that have a very particular flavor, which may work nicely with berries and sweetener, but doesn’t really work well in savory dishes. Look for any plain, unstrained, unflavored yogurt that you’d actually want to eat plain. I find that both Indian and Middle Eastern brands generally work really well here.

You can substitute another green in place of the swiss chard. Just avoid very bitter greens like dandelion, and if you use a more delicate green like spinach, reduce the cooking time and add a little more of the greens. You can also substitute barley in place of the rice, which is equally traditional. If you use barley, you’ll need to par-cook it ahead of time, since it takes much longer to cook than rice. Just simmer it in some water until it is still a little crunchy and unpleasantly chewy, and then add it to the soup to cook the rest of the way.

Ingredients

  • 1/2 cup medium grain rice
  • 2 quarts of plain, unstrained whole milk yogurt (either homemade or store-bought) *
  • 3 cups water, or more if necessary
  • 1 egg
  • 1 1/2 to 2 teaspoons salt (to taste)
  • 7 celery stalks, chopped into about 3 cups
  • 2 banana peppers or 3 small hot peppers (such as jalapeño or güero), chopped (if you want to make it milder, remove some or all of the waxy pith)
  • 1 large bunch Swiss chard, chopped into about 6 to 7 cups of bite-sized pieces (?)

Instructions

  1. Rinse the rice under cold water and add it to a stockpot.
  2. Add the yogurt, water, egg, and salt to the pot. Whisk everything together until the liquids are completely combined.
  3. Add the celery, peppers, and Swiss chard to the pot.
  4. Turn the heat up to medium-high and stir constantly until it comes to a simmer. This should take about 20 to 25 minutes. Do not stop stirring and keep an eye on it to make sure you turn the heat down as soon as you see bubbles.
  5. As soon as it begins to simmer, turn the heat to very low and cook for about 8 more minutes, until the rice is cooked through and the vegetables are al dente. Stir occasionally and keep the pot uncovered while it cooks. If it looks too thick, add between 1/4 and 1/2 cup of water.
  6. Serve either hot or chilled, depending on your preference or the weather. **

Notes

* If you’re making your own yogurt: make a half recipe of plain, unstrained yogurt (you will use 1/2 gallon of milk and 1/2 cup plain yogurt). Follow the instructions as written in my homemade yogurt recipe, but leave the yogurt to ferment for somewhere between 12 to 16 hours, depending on how sour you want the soup to be. Sometimes I like to make a full gallon of yogurt, and then divide it in half. I use one half to make labneh and the other for booshala. I’ve heard that in Syria, my family would add some of the whey from the labneh back into the booshala in place of the water. I’ve never tried it myself, but it might be worth experimenting with, especially if you’re looking for ways to reduce food and water waste.

** I like to serve a big chilled stockpot of booshala, and then I microwave individual bowls for people who want theirs hot (and in case you’re wondering, I prefer eating hot booshala).

sumac thyme cake

If we’ve chatted in the last few weeks, or if you’ve been following my recent Instagram stories, you might have already heard the big news, but here it is in case you missed it: as of two weeks ago, I’ve officially moved to Hong Kong! My husband recently started a new job out here, and we’ve been loving our new surroundings. The lovely people we’ve met, the beautiful sights we’ve seen, and the absurdly good dim sum we’ve eaten have made us feel so at home in this magnificent city.

But as you might expect, moving to another country (or even just moving to another city!) can be challenging. And for some reason, I decided that in the midst of registering for new accounts, IDs, etc., moving into a new apartment, buying all new stuff, getting to know a whole new place, and recovering from 13-hour jet lag, it would be a good idea to break in our brand new kitchen in our brand new 397 square foot apartment by baking an elaborate layer cake.

Hong Kong is an amazing city where you can find just about any food you’re looking for. There is so much variety, and it’s been enriching and fun to try new foods and ingredients (like the $8 Japanese peach I accidentally bought the other day, which was totally worth it), and it’s been a lovely change of pace to be able to find so many things that are a little difficult to come by in the US (okra is everywhere here! Everywhere!). But it’s also the kind of city where you need to know your way around to really take advantage of this diversity.

So the first challenge in baking this sumac thyme cake was tracking down ingredients and getting them home in one piece. I managed to do both, but only after dropping an entire carton of eggs in the middle of a subway station after grocery shopping for five hours straight. I felt like a really lame character in a romantic comedy who just can’t seem to get it together.

But this grocery shopping ordeal also had its triumphs, as well as a few near misses. Regency Spices was one of my first stops. I spent fifteen minutes walking up and down a block of delicious looking (and delicious smelling) dried seafood stalls, trying to find this spice shop, with its promise of sumac. Finally, I found my way to the fourth floor of what looked like it might be an office building. I rang the bell and a kind woman greeted me at the door of what I now realized was definitely an office building. I almost apologized and turned away, until I noticed a small rack of spices to the left. She explained that this address isn’t their storefront, but that they keep some spices on hand at the office, for “spice emergencies.” Ah yes, spice emergencies. I’ve finally found someone who really understands me. Luckily they had one last jar of emergency sumac, which I bought along with some turmeric for later, and I was on my way.

Next, I made my way to I Love Cake, which has the most insanely comprehensive collection of baking gear and ingredients I’ve ever seen. They’ve packed more useful stuff into a 300 square-foot shop than any baking store I’ve ever been to. I also spent some time tracking down fresh thyme, which isn’t super easy to find, and I had to buy plates, a flat serving dish, and a few other odds and ends. Oh, but I totally forgot to buy the plates, which is why the slice of cake in the photos below is being served on the counter. Let’s just call it messy-on-purpose food styling.

After all this grocery shopping, I’ve finally had a few free days to tinker with this recipe, and I’m so excited to share it with you. This sumac thyme cake is inspired by the flavors of za’atar, but I wouldn’t necessarily call it sweet and savory. The cake itself is a thyme cake with a little hint of lemon. Its flavors are sophisticated and challenging, but deep down, it’s just a yummy, buttery cake. The cake’s sumac flavor comes from sumac curd, which gets slathered between each layer.

Sumac is often compared to lemon and vinegar, but these analogies don’t do it justice, since the only similarity is tanginess. Sumac has a flavor all its own, and while it’s usually used in savory dishes, it’s not an inherently savory flavor. Paired with thyme, it really creates something magical and new. The two flavors work together just as well as they do in za’atar, but they taste completely different in this new context. It’s sort of like watching your favorite film duo acting together in two very different movies. Each movie might have a different tone and a different story, but there’s still that same chemistry.

Ingredients

For the candied thyme:
Fresh thyme (about 15 to 25 sprigs)
1 egg white (pasteurized, if you are concerned about eating raw eggs; save the yolk for the curd)
Sugar for sprinkling

For the sumac lemon curd:
4 large eggs
2 large egg yolks
1 cup sugar
1/3 cup lemon juice
1/4 teaspoon salt
2 tablespoons sumac
1/2 teaspoon lemon zest
1 cold stick of unsalted butter, cut into pieces (4 ounces, or 1/2 cup)

For the thyme cake layers:
Butter for greasing the cake tins
22 ounces cake flour *
1 tablespoon baking powder
1 teaspoon lemon zest
1 1/2 tablespoon fresh thyme leaves (1 tablespoon chopped)
2 1/4 sticks softened unsalted butter, at cool room temperature (9 ounces)
2 1/2 cups sugar
1/4 teaspoon salt
3 large eggs at room temperature
3 large egg yolks at room temperature (save the whites for making buttercream)
1 1/4 cup whole milk at room temperature

To assemble the cake:
3 layers of thyme cake, completely cooled to room temperature (above)
1 batch of sumac curd (above)
3 to 4 cups of your favorite unflavored, plain frosting, at room temperature ****
candied thyme (above)

Instructions

  1. Candy the thyme: Gently bend the thyme sprigs so that they are very slightly rounded (or skip this step for a more jagged, less circular look). The candied thyme will eventually form a wreath around the frosted cake, so use your cake pan as a guide, nesting them inside the pan along its edge.
  2. Beat the egg whites for 1 minute to get a homogenous consistency.
  3. Wet the tips of your fingers with the egg whites and brush a very thin layer onto the thyme sprigs. Or you can dip the sprigs in the egg whites and wipe off the excess (dipping will create a chunkier look, different from the photos).
  4. Place the sprigs on parchment paper. Sprinkle sugar over them and gently roll them around to coat evenly.
  5. Let them dry, uncovered, for about 6 hours (up to overnight), until they’re crispy.
  6. Make the sumac lemon curd: Beat the eggs, egg yolks, and sugar for about 2 minutes, until the sugar starts to dissolve and the color lightens a little.
  7. Whisk in the lemon juice, salt, sumac, and lemon zest.
  8. Cook over medium-low heat for about 10 minutes, whisking constantly (do not stop whisking!). Turn off the heat once the mixture thickens.
  9. Immediately add the butter all at once, and whisk constantly until the butter has been completely incorporated into the mixture.
  10. Chill completely before frosting the cake.
  11. Bake the cake layers: Preheat the oven to 350° F convection. **
  12. Butter 3 8-inch round cake pans, cover the bottoms in parchment rounds, and then butter the exposed sides of the parchment rounds. ***
  13. Sift together the cake flour and baking powder.
  14. Finely mince together the lemon zest and thyme leaves.
  15. Use a hand mixer or stand mixer to cream the butter and sugar together for about 3 to 5 minutes, until the mixture is light and fluffy.
  16. Add the salt, thyme, and lemon zest and combine.
  17. Crack the eggs and yolks into a liquid measuring cup. Add the eggs to the batter 1 at a time. Each time you add an egg, mix it in completely (about 30 seconds), and make sure that the mixture smooths out before adding the next one.
  18. Add the whole milk and mix together for about 30 seconds, until the batter smooths out.
  19. Carefully mix in the cake flour mixture. Immediately stop mixing as soon as the batter comes together and there are no raw flour pockets.
  20. Divide the cake batter equally among the 3 cake pans (I use a scale to make sure they’re even). Smooth out the tops with a spatula.
  21. Bake for 25 minutes, until the tops are golden brown and a toothpick inserted in the middle comes out clean, with just a few crumbs.
  22. Run a knife around the pans, staying very close to the side of the pan. Remove the cakes by inverting, and then let them cool flat-side-down on wire racks.
  23. Assemble and decorate the cake: Once the cakes are completely cool, use a long serrated knife to level the cakes if they have humps. Save the scraps for cake pops or freeze them for another day’s snack. If it looks level, use the ridge at the top edge of the cake as a guide, and cut off the hump jutting out above it.
  24. Once the cakes are level, place the first one cut-side-up on a rotating cake tray with a cardboard cake round underneath. If you don’t have a turntable or a cardboard cake round, simply place the cake on the tray or the plate you will use to serve it.
  25. Dole out about half the chilled sumac curd, spreading it out over the first layer, leaving a border of about 3/4 of an inch around the curd (it will spread as the cake settles).
  26. Place the next layer cut-side-up over the curd-covered first layer. Spread the remaining curd on this layer in the same way, holding a little back if it looks like too much (serve any extra on the side).
  27. Place the final layer cut-side-down over the middle curd-covered layer.
  28. Inspect the cake to make sure each of the layers line up perfectly.
  29. Let it chill in the refrigerator for about 15 minutes to make sure the lemon curd settles in and sticks everything together.
  30. Top the cake with about 2/3 of the frosting and start smoothing it out with an offset spatula, rotating the turntable instead of moving your spatula around, or smoothing it out as best you can if you don’t have a turntable. As the frosting starts to drip over the sides, start to smooth it out over the sides.
  31. Continue to smooth out the top, working the frosting down the sides, until everything is covered in a thin layer of frosting.
  32. Add another blob of frosting to the top of the cake and smooth it out, being careful not to pick up any of the layer beneath as you work. The top should be smooth and crumb-free.
  33. Place the edge of your offset spatula up against the side of the cake at a 45 degree angle. Rotate the turntable, grazing the surface with your spatula, exposing the side of the cake.
  34. Using quick motions, lightly smooth the upper edge into the center of the cake to get rid of the big ridge you just made. Smooth out the top gently and carefully if necessary.
  35. Move the cake to a cake display or plate. Place the candied thyme in a wreath around the top and base of the cake.
  36. Enjoy immediately or keep it chilled for a few hours before serving.

Notes

* It’s fine to use all purpose flour, but the cake won’t be quite as tender. In either case, be careful not to over-mix once you add the flour to the wet ingredients.

** If you’re not using a convection oven, you may need to slightly increase the temperature and/or cook them just a minute or two longer.

*** You can use a 9-inch pan or another size. The cook time will be shorter with a wider pan and the finished cake will be shorter and wider (and you might need a touch more frosting, since most of it ends up on top).

**** If you’re going for home made, I suggest a half-recipe of Brave Tart’s Buttercream. It’s my go-to, it’s truly magical, and it’s pictured in this post. Just be sure not to add vanilla bean or any extracts for this recipe, and not to buy vanilla-flavored buttercream if you’re going the store-bought route—vanilla would be a very distracting flavor in this recipe. You can get away with 3 cups of frosting here, but more like 4 cups will give you a little more leeway. It’s nice to have extra for covering up crumbs on the top of the cake and filling in gaps on the sides. Plus, you can make cake pops out of any extra cake shavings and frosting.
